What Should I Bake? Lisa Yockelson’s “Baking by Flavor” helps make these “what to bake” decisions even easier. The book contains over 250 desserts organized by flavor. From almond, banana and chocolate to lemon, rum and vanilla, Ms. Yockelson’s book has it all. And not just flavors, but different kinds of bakes. Cookies, cakes, brownies, biscuits, tarts, scones, pancakes, tortes, bars, muffins, waffles, squares, rolls...you get it. One of my favorites is the Texas-Size Banana Muffins recipe that I’ve modified to make Banana Chocolate Chip Muffins. Smaller than the size of Texas and fewer spices, but still delicious. According to Yockelson, by using compatible ingredients, the home baker can boost flavors with what she calls “flavor-layering” and what I call “yummy”. Best of all, these are recipes that you’ll actually use with items you’re likely to have in your pantry. Just like flour, sugar and butter, “Baking by Flavor” should be one of your baking staples.
